You would simply have to follow the recipes and make sure that you are taking the exact measurements that is mentioned in the card or the book that you are using. Being able to make the candies from scratch and storing it at a dry place should be your priority. You need to store it in a cool or a moderate temperature place. Everything that you use should be at an optimum room temperature and this goes the same for eggs too. If they are cold just when you have taken them out of the refrigerator, put them in the warm water for a little bit until they get back on the right environment.
Making candies at home would require patience so if you are planning on making a few, make sure you have your full attention towards them instead of being on the phone or using the TV for the duration the mixture sets or anything. If you are making fudge and you want it to stay creamy and fresh for a longer amount of time, store it in a plastic wrap or foil that would preserve its content. Taffy and caramel containing candies should be stored separately into foils in order to prevent moisture and stickiness as well.
